Always following the tradition and natural methods, our winemaker Victoria Cabrini creates beautiful wines that represent the soils, vineyards and soul of our family winery.
From the vineyard, the grapes are hand-harvested in 20kg small cases and selected to provide the best possible quality. Once inside the winery, the grapes are crushed and fermented in cement vats using indigenous yeasts. This takes about 2 weeks, depending on the wine.
With no added chemicals in the vineyards, and only using minimal amounts of SO2, our wines are stored in cement vats and stainless steel tanks before bottling.
The principal method we use to express the true nature of our wines is to keep things as simple as possible, with very little intervention.
Then the wines are bottled and stored for some time in the winery before they are ready to go.
